Apple lemon curd pie

Sometimes you have left overs and these left overs make for a very nice apple lemon curd pie. We had a jar of lemon curd lying in the freezer and had a ton of apples from the garden. They are perfect for making apple pie, apple sauce and more. 







For one pie you will need:

  • 1 x 540g pack puff pastry
  • 7 tbsp of lemon curd
  • 4 apples
  • 5 tbsp of sugar
  • 2 tsp of cinnamon


Here is what you have to do to make this apple pie:

Preheat the oven on 220 degrees Celsius. Cut the apple in small slices, put them in a bowl and add the sugar and cinnamon. Mix together. Let the puff pastry slices defrost on the countertop. Grease the tin with a little butter. Place the puff pastry slices on the tin, so they overlap and press them together. This way you have filled both the bottom and the sides with puff pastry. Spread 5 tablespoons of the lemon curd on the bottom. Lay the apple slices standing up on the pastry until you have filled the bottom (if you have any apple left, try to squeeze them in between the other apples. Put the tin in the oven and bake for around 15 to 20 minutes. Meanwhile, we will be creating the glaze. In a small pan add the remaining 3 tablespoons of lemon curd with 2 teaspoons of water. Stir until it is just runny. When the tarts are finished and you have removed them from the oven,  brush the apples and pastry edges with the glaze. 




Two delicious bruschetta recipes

A few weeks ago we had some friends and family over for an Italian dinner. And what better to serve as a starter then bruschetta. I made two different types of bruschetta. The first was the classic bruschetta recipe, this is a bruschetta with tomatoes, basil and garlic. The second some ingredients I put together, it is a bruschetta with home made pesto (extra cheese) and baked onions. Both are delicious and very easy to make.



Recipe nr 1. Classic bruschetta.

Here is what you need for 8 pieces of bruschetta:

  • two big tomatoes or 4 smaller ones.
  • 10 leaves of basil
  • 2 gloves of garlic
  • 8 pieces of bread
  • Olive oil



  • Pre heat the oven on 200 degrees.
  • Cut the tomatoes in small parts. Cut the basil in small bits. Make your garlic small using your garlic press. Mix these ingredients together. 
  • Spread some olive oil on both sides of the bread. Take the pieces of bread and lay these on a baking tray. Divide the tomato mixture over the pieces of bread. 
  • Put them in the oven for 10 minutes until the tomatoes look nice and soft. 




Recipe nr 2. Pesto onion bruschetta.

Here is what you need for 8 pieces of bruschetta:

  • Your favourite home made pesto recipe;

– Leaves of one basil plant

– 3 gloves of garlic

– 4 tablespoons of olive oil

– 200 grams of cheese

  • 2 onions 
  • 8 pieces of bread
  • Olive oil



  • Pre heat the oven on 200 degrees Celsius.
  • For the cheesy pesto. Mix all the pesto ingredients stated above in a blender until a smooth paste is created. If the mixing gets hard or you have too much big pieces, just add some extra olive oil to make it a bit more creamy. 
  • Cut the onions in slices. With a little butter or olive oil in the pan, bake the onions until nice golden brown. 
  • Spread some olive oil on both sides of the bread. Take the pieces of bread and lay these on a baking tray. Divide the pesto mixture over the pieces of bread and sprinkle the onions on top of the pesto. 
  • Put the bruschetta in the oven for 10 minutes.



I hope you will love this recipe as much as we did. I especially love the pesto bruschetta because it is not something you get or see everyday. It is a really fun starter to surprise your guests with. 

Zucchini soup

Our vegetable garden was doing great and we were growing multiple of zucchinis. Since we could not eat them all on short notice, I thought, why not make soup out of it? Soup is super easy to put in the freezer and save for another time. 

The soup is delicious and has a very mild taste which results in most people loving the soup.


Here is what you would need:

  • 3 liters broth/bouillon
  • 2 zucchinis
  • 4 carrots
  • cream 



Here is what you need to do to get this amazing zucchini soup:

  • Cut the carrots and zucchinis in pieces of 3 centimetres. 
  • Cook the carrots and the zucchinis for 20 minutes. 
  • Add the broth/bouillon and mix with the stick blender. Next you add the creme and stir well with a whisk.
  • You can finish the soup off with some little pieces of bacon or ham. It is very nice to serve with a piece of bread.

Chocolate Peanut Butter Cake

Sorry for the lack of posts lately! We were on a fantastic vacation in Italy and I couldn't get myself to sit down and write a blog post (I know, it's bad). But here I am, back with a delicious cake I made for Maxime's birthday party. 

In my opion, cake and birthday got together hand in hand, so every birthday must be celebrated with a delicious cake. As some of you might know, I have recently started eating a plant-based (vegan) diet. This meant that I didn't want to eat the cakes that my family made. So I decided to try out this vegan cake recipe I found on – you guessed it – Pinterest.

And trust me, if you love peanut butter and chocolate and do not use too much frosting, you'll we thrilled to find out how delicious this is. Let's get baking!

TIP: we didn't use as much frosting as this recipe says, because we felt it took away all the flavour of the cake. Aim for less than half of the prescribed frosting.



Cake skewers

So I saw this Strawberry Shortcake Kabobs recipe on Pinterest and I thought that would be soo fun to make. I decided to make the recipe a bit more Dutch and to make a Stroopwafel Cake instead of shortcake. Add strawberries and white chocolate and you have this amazing, delicious and cute treat.



So here is what you would need:

– 1 pack of basic cake mixture. Something like this.

– Half a pack of stroopwafels.

– 500 grams of strawberries

– 200 grams of white chocolate

– Pack of skewers




Preparations of these fun skewers:

– Crumble the stroopwafels into pieces. Make the cake mixture as described on the package and add the pieces of stroopwafel before you put it into the oven. Make sure to use a brownie tin or an oven dish, because you want to create a low cake. Bake this cake as described on the package and let cool off. 

– Melt the chocolate and clean the strawberries. If you have really big onces, you might want to cut them in two, horizontally. 

– Cut the cake into pieces of 4 by 4 centimetres. Take one piece of cake, put as strawberry on top, add another piece of cake and a strawberry. Finish this of by putting you skewer through it. 

– Place all the skewers on a piece of parchment paper and make sure you put this on a flat surface. Divide the chocolate over the skewers using a spoon. I just drew some lines of chocolate on each of the skewers and then moved on to the next one. 

– Place them on a plate and put them in the fridge so the chocolate will be able to dry perfectly. If you want you can then also put chocolate on the other side and repeat the process until you have done either 2 or 4 sides. I prefer to do two sides.

– And ready are your cake skewers!!




The best tofu ever within 15 minutes

I've been searching all over the Internet and Pinterest (of course) how to make GOOD tofu. Well… they will tell you it's really really hard and you should basically practise for 10 years before knowing how to make tasty tofu.

So there I was, convinced I would not able to make tofu worth serving to hard core meat eaters ever 😉

Of course, my love for preparing good food would not hold me back so I thought I would try and make tofu for the first time. I went to the store, bought me some tofu and started preparing. I knew that tofu is the best when prepared long before eating but I only had 2 hours before dinner time. I dried out the tofu as fast as possible, marinated the tofu and put it in the fridge for half an hour.

And let me tell you, it tasted AMAZING. It had a LOT of taste and was just soft, sweet goodness.








  • Tofu
  • Agave syrup
  • Ketjap Manis
  • A small piece of Ginger; cut into small pieces
  • A little bit of salt and coriander 
  • Paprika powder, garlic powder and kurkuma powder

The quantity of the ingredients will depend on how much tofu you're making. You can taste it while stirring it together and change it when needed.


Prep time:

Dry out tofu: 45 min (or longer if you have the time!)

Preperation time: 15 min

Refrigerate marinated tofu: 30 min (or longer if you have the time!)

The longer you will dry out en refrigerate the tofu; the better the tofu can suck up the marinade; the better the tofu will taste.


How to make it:

1. Dry out the tofu by wrapping it in a dishcloth, putting it between two cutting board and put as many havy stuff on top of it as ou can. I used 3 thick books and my laptop (not very safe for your laptop though).

2. Stir all the ingredients (except the tofu) together in a big bowl. 

3. Cut the tofu in small pieces. The smaller the pieces, the more tasty your tofu will be. 

4. Stir the tofu through the marinade and put it in the fridge until your dinner!

I added the tofu to a wok.


And that's IT! So easy right?

Easy vegan wok recipe!

The best bacon burgers!

Our brother cooked for the cook-challenge once and made bacon burgers! These where in one word: A M A Z I N G ! The bacon in the burgers made them very juicy and not dry as burgers can get sometimes. A few weeks ago I made them and they tasted great again, so here is the recipe!




Here is what you will need for these bacon burgers:

  • 500 grams of ground beef
  • 200 grams of bacon
  • Hamburger seasoning mix, 30 grams
  • 1 egg


This are the preparations:

Cut the bacon in little pieces. Mix the beef, seasoning, pieces of bacon and the egg together. Create burgers from the mixture. 

Put some butter in the pan and bake the burgers until they are brown and well-done. Serve with a bun, lettuce, tomato and other toppings you like.

Enjoy your bacon burger!

Perfect Fruit Smoothie

I love smoothies, even so bad I made one this morning , I thought I would share it with you guys. This is really good for you and will provide you with a lot of energy during the day 🙂











  • 1 Apple
  • Half a cup of frozen red fruits
  • 1 Banana
  • 10 Grapes
  • Some ice (optional, to make it colder) and some water
  • A teaspoon of Chia seeds

I put little pieces of melon in the snack area of my smoothie cup. Then I put it in my backpack and enjoyed it while I was at school. Hmmmm, so fresh, fruity and energising.

I made this with almond milk yesterday, which is also very very yummie. Now just blend it all up and enjoy!

Easy, Delicious and Healthy Mexican Casserole

I love mexican food soooo much, and since I started eating beans (yup, I was one of those kids who was afraid of beans), mexican food has become an even bigger part of my healthy, filling and awesome tasting food choices. This dish looks awesome and will make everyone happy at your food table. The dish is easily made vegatarian (the one I made is) or vegan (just skip or replace the cheese)!

The casserole is really healthy if you skip the melted cheese and the fats in them, it will still taste awesome, so win-win;)

You can eat the casserole as shown above or put it in a taco or a wrap, all yummie! 

Oh, and before I forget, this is the easiest recipe ever; just gather all the ingredients, hussle them and put it in the oven (for explicit explaination scroll down).







Servings: 6

Preparation time: 10 minutes

Cooking time: 15 minutes

All together: 25 minutes



  • 1 can of black beans
  • 1 can of (Indian) corn
  • Half a zucchini, sliced and cut in pieces
  • 1 tablespoon of coriander
  • 1 cup of brown rice (or quinoa)
  • Cheese, rasped

For the sauce:

  • 140 gram of tomatosauce (you can add more for a more dressing like texture)
  • Half of a avocado, smashed 
  • 3 tablespoons of hot taco sauce
  • 10 drops of tabasco 
  • Peper, hot curry and hot paprika to taste



Cook the rice as described on the package. Throw all the ingredients (also the once for the sauce) in one big bowl and mix it together. Add the rice when it's done and mix that in as well. Grease a little oil on the bottom and the sides of the casserole and pour everything in it. Spread the cheese (If you want to) on top of your casserole. Put the casserole in the oven at 220 degrees celcius for about 15 minutes.

Dutch Ice Cream Cake

We had this family dinner planned and I wanted to bring something like a dessert or cake. I had my eye on these special cakes you can buy in the store, but I could not find them at that moment. So I figured I had to think of something else. As an ice cream lover, the step to ice cream was pretty quick. I decided to mix in some real Dutch poffertjes to give the Ice Cream Cake an extra bite to it. The first strawberries are just coming to the store so really wanted to add them too. So it became a mixture of these ingredients. Sounds good right!


Ingredients for the Dutch Ice Cream Cake:

  • 100 grams of dark chocolate
  • 500 grams of strawberries
  • 1 liter of ice cream ( I used half a liter of vanilla ice cream and half a liter of three chocolates ice cream)
  • Pack of 75 poffertjes, 625 grams.








So here is what you do:

Cut the strawberries in four pieces. Melt the chocolate and keep it warm. Get a baking dish or something you like to use… but make sure that it still fits in your fridge :). 

Sprinkle some strawberries and poffertjes in your baking dish. Add ice cream in the empty parts. When the baking dish is nice and filled, add another layer of strawberries, poffertjes and ice cream. Continue doing so until you have finished all you products. Now add the hot chocolate on top of the ice cream cake. 

Voilà, your ice cream cake is ready. Now put the cake into the fridge for at least half an hour to get the ultimate result.



I really loved the combination of chocolate, ice cream and the Dutch poffertjes. The poffertjes stayed really soft and where easy to eat even though they where frozen. The strawberries on the other hand were very hard and cold to eat, but still very delicious.
